On the VMware Workstation side, have a look at: 
Expand a Virtual Hard Disk
On the Unixware side, I'd suggest reading the SCO UnixWare 7 Documentation, e.g.: Adding disk space and restructuring filesystems
NOTE: Make sure you have proper backups of both the Virtual Machine itself and the Filesystems on the virtual hard disk before proceeding!
